Amanda started her gluten free journey in 2011, four years after being diagnosed with Multiple Sclerosis. Years of research and experimentation lead to great results, as Amanda is now thirteen years relapse free, crediting in large part her gluten free diet. Amanda is a strong advocate for taking personal responsibility for one’s health, which she detailed in her 2016 TEDx Talk, “The Illusion of Convenience.” Here, Amanda encourages anyone with a chronic illness to believe they have more control than they think and that they can drastically improve their quality of life with just a few lifestyle changes.
In 2017, Amanda opened Fettle + Fare, a 100% gluten free restaurant in Westfield, NJ. Over their six years in business, Amanda has met thousands of people with Celiac Disease, Gluten Intolerance, and other health conditions who are using a gluten free diet to improve their health. Her 1:1 experience working with this community has provided her with a unique perspective of how best to serve NIMA Partners’ diverse customer base and potential collaborative partners who can help individuals understand how to live their best life within their own ecosystem.
Amanda’s goal is to impact NIMA Partners’ reach worldwide, making sure everyone who needs a NIMA Partners Gluten sensor, has one. She is most passionate about understanding how gluten impacts brain and nervous system health, and hopes to make great strides in helping those who suffer from neurological disorders and dementia.
